1: A Review of the Defects in Green Coffee

  • 1: Brazil Has its own System of Assessing Quality Based on these Five Aspects::
  • Physical aspects: The look and feel of the beans.
  • Colour: A healthy vibrant green colour is a sign of quality. If the beans are not green in colour there’s a problem. Defective beans can go black, yellow, or foxy coloured. 
  • Aroma: The impressions of quality you receive from your olfactory system (your sense of smell)
  • Taste and Flavour: The combined impressions of your gustatory (taste) and olfactory senses.
