What’s in Chapter Three?

 

  • We introduce two fundamental tools you need to monitor your water’s effect on machine safety and on coffee flavour: the Langelier Saturation Index (LSI) and the Water Control Chart.
  • We teach you how to use an LSI calculator to make predictions about how corrosive or scale-forming your water will be.
  • We look at how the balance of hardness and buffer will impact your coffee flavour and show you how this balance can be depicted visually as a Water Control Chart.
