The climate of Atitlán is wet and windy, which keeps the temperatures low and contributes to the slow ripening of coffee in this region. As a result, coffees from Atitlán have a pronounced acidity and, often, citrus and floral characteristics alongside the more typical Guatemalan flavours of nuts and chocolate.
